Tomás Silva Jr. is the owner and operator of El Burrito on Wheels, the mobile extension of St. Paul’s iconic El Burrito Mercado. As the son of founders Tomás and María Silva, Tomás Jr. has played a vital role in expanding the family’s culinary legacy beyond its brick-and-mortar roots.
